Mock Chicken Salad 2 c Diced cooked pork or veal
1 c Diced celery
4 Ripe olives, chopped
1 Pimento
1 c Boiled salad dressing
Salt and pepper
Combine meat, celery, olives, and 1/2 the pimento. Season to taste. Moisten with salad dressing. Mix lightly with 2 forks. Serve on crisp lettuce. Garnish with strips of pimento. 4 servings.
