Boffo Veal Rolls 6 tb Butter
1/2 c Green onion; chop
2 md Cl garlic; mince
1 c Soft bread crumbs
2 c Apple w/peel; chop coarse
1/2 ts Salt
1/2 ts Poultry seasoning
12 Thin veal scallops
Flour; dusting
3/4 c Orange juice
1/2 c Light rum
1 md Apple; slice, saute
Hot cooked rice
In skillet, melt 4 tb butter. Add onion and garlic and saute, stirring often, until onion is golden. Blend in bread crumbs, apple, salt and poultry seasoning. Divide stuffing among veal slices. Roll up each slice and secure with toothpicks. Dust lightly with flour. Brown veal with remaining 2 tb butter. Add orange juice and rum. Simmer, covered, for 20 minutes or until veal is tender. Serve garnished with apples over rice or pasta.
