Veal Terrine En Croute 1 1/2 lb Ground veal
1/2 lb Fresh mushrooms; chop fine
1 md Onion; chop fine
1 tb Parsley; chop
1 tb Celery; leaves; chop
1 Cl garlic; mince
1 c Soft bread crumbs
2 Eggs
2 tb Drambuie
1 ts Salt
1 ts Black pepper
14 ts Cayenne
18 oz Pk puff pastry
Mix all ingredients except puff pastry thoroughly. Place in an 8x4 buttered loaf pan. Pat mixture evenly in pan - about 3/4 full. Place pan inside a larger pan of warm water and bake at 350~ for 1 hour. Remove from oven. Let stand 5 minutes; unmold and cool. When cool, roll out a piece of puff pastry large enough to encase loaf. Wrap loaf in the pastry with the seam at the bottom. Trim the edges. Moisten the seam with cold water and pinch together. Bake on a cookie sheet at 450~ for 10 minutes or until crust is browned and puffed. Serve warm or cold with mustard.
